| Agave is from a cactus plant mostly located in regions of Mexico. The bulb of the plant (sometimes called the pineapple), is where the syrup is taken from. The main carbohydrate is a complex carbohydrate called inulin or fructosan. It's this carbohydrate that gives both the intense sweetness and the very low glycemic index. | You can use it like sugar in recipes, it tastes like sugar, looks like honey, but it is sweeter than sugar. It has a low glycemic index so it's diabetic friendly. Ours is certified Organic & Kosher. |

It's still a predominent almond butter, but with a little more jazz. The chocolate in here resembles layers of mountainous terrain (think Grand Canyon), but melts to a beautiful smooth rich texture as in the photo above. The very high cocoa content contains the many antioxidants dark chocolate is known for. It's a new flavor experience in that it is from a single varietal bean from a region in Peru. The way the cocoa beans are dried (these were sun dried) and the region gives it a particular taste. It is totally unsweetened, so you can melt it & cover sweet foods such as banana slices. Put them in the freezer to harden for great snacks, dip sweet cookies or add to too sweet foods to balance the flavors. It's perfect for making your own confections such as "puddles" (drops of chocolate that form into round flat forms). Warm the chocolate (it melts easily on a double boiler or microwave), add your own amount and type of sweetener (our agave for example) and top it with one of our beautiful huge organic pecans.
